2 ounces gin

¾ ounce fresh lemon juice

¾ ounce Simple Syrup (this page)

4 to 6 ounces / ½ to ¾ cup chilled sparkling water

Optional Garnish Lemon wheel

In a shaker, combine the gin, lemon juice, and simple syrup. Dry shake for 5 seconds. Pour 2 ounces of the sparkling water into a tall ice-filled Collins or water glass, and empty the contents of the shaker into the prepared glass. Top up with the remaining 2 to 4 ounces sparkling water. Garnish with a lemon wheel and serve with a straw if you like.
